Mmmm pudding shots! If you are looking for something that is a boozy cross between a dessert and a jello shot, pudding shots are perfect for you! (Well, if you are over 21 that is.) Easy to make, pudding shots are a great “adult” pudding recipe that is fun at parties, for game-day, or just because!

RumChata® Pudding Shots Recipe Notes:

● I used Cool Whip, which is a brand name. You can use another brand of imitation whipped topping if you like.

● This recipe used Jello instant pudding, but you can use any instant pudding brand.

● If you are slicing a fresh coconut to toast, make sure the strips are very thin and remember it will not be as sweet.

● This recipe may be doubled or tripled for parties. In that case, you may want to consider using a stand-mixer instead of a hand whisk so your arm does not get tired.

RumChata® Pudding Shots Ingredients:

● 3.4 ounces of Instant Coconut Cream Pudding (1 box)
● 1 cup Cold Milk
● 1 cup RumChata Liqueur
● 8 oz tub Imitation Whipped Topping, thawed (Cool Whip)
● 2/3 cup Sweetened Coconut Flakes, for garnish
● Whipped Cream, for garnish

● 12 (2.5 oz) plastic pudding shot cups with lids if transporting

RumChata® Pudding Shots Recipe Directions:

1. Place the plastic soufflé cups on a large baking sheet. Set aside.
2. Pour the contents of the 3.4-ounce coconut cream pudding box into a large mixing bowl. Add one cup of cold milk and whisk until smooth and creamy. You can complete this step with a hand whisk or mixer, if you prefer.

3. Stir in one cup of RumChata liqueur until it is well incorporated with the pudding.

4. Fold in eight ounces of whipped topping and stir until the pudding mixture is light and fluffy, and you no longer see any white streaks of the whipped topping.

5. Spoon the RumChata pudding mixture into the plastic soufflé cups, filling to the top of each rim.
6. Place the cups in the refrigerator and chill for at least 4 hours. After the 4 hours, you can place the lids on the cups if you are not serving right away.

7. Line a baking sheet with parchment paper and spread the coconut flakes onto it. To toast the coconut, broil on high for 3-4 minutes or until they begin to turn a golden brown, stirring at least once. Remove from oven and allow to cool for at least 20 minutes.

8. Before serving the RumChata pudding shots add a dollop of whipped cream to each RumChata pudding shot and sprinkle with the toasted coconut.
