Ingredients
- 1⁄3 cup 80 ml coconut cream
- 1 tsp 1 tsp vanilla extract
- ¼ tsp ¼ tsp salt
- 2 tbsp 2 tbsp almond butter
- 10 drops liquid sweetener (stevia)
- 2 tbsp 2 tbsp cocoa nibs

Making low carb simple
Instructions
Instructions are for 8 servings. Please modify as needed.
Combine everything in a small bowl and whisk until well combined.
Chill the mix for 15 minutes then use a spoon to scoop and shape 8 bite sized balls and quickly return to the fridge to harden for 30 minutes.
Keep in the fridge until ready to eat.
Tips
Coconut cream is the solid fat that separates to the top of the coconut milk can when it is chilled. Make sure you're using this part for the right consistency.
Instead of almond butter, you can also use peanut butter or peanut butter powder, or basically any nut or seed butter.
You can also use sugar free chocolate chips!

Coconut flour absorbs much more liquid. If you want to use coconut flour, try using half the called for amount.

No, they are very different products. Coconut oil is usually found near the cooking oils and coconut cream (and coconut milk) are frequently found in the Indian food aisle.

I'd be interested in hearing how this turned out for others. It's not very solid... even after 15 minutes in the freezer. And plenty sweet without the stevia. Seems like the recipe is missing a thickener.

Coconut cream is what helps solidify once frozen. i have added more than the recipe says cause it would never make 8 servings, so i believe about 200ml and i took the water out of it. Consistency becomes then of a cake batter a bit. Then i froze it all for an hour, it will never take in 15 min i don't think so. It's a delicious recipe without Stevia ( cause stevia adds bitterness, i used erythritol caramel syrup instead). Result tastes better than the coconut vegan ice creams i usually buy.

Some people are mentioning almond flour and coconut flour but that is not on the recipe list so I was confused... I did notice when I opened the can of coconut cream, there was liquid at the bottom. I don’t think you’re supposed to use the liquid part of it. Since people have said it was a problem with the consistency, I also added an extra tbsp of almond butter and put my mixture in the freezer. I like that it doesn’t have a coconuty taste because I was afraid of this. The taste is very light. This recipe saved my keto diet in my first week.

It's apparent the recipe was changed sometime in the last couple years but why hasn't anyone from DD addressed the concerns raised? Since I neglected to read the comments until after making the recipe I'm left with a bowl of pudding after following the directions as written and exact ingredients specified. Thanks a lot DD.
