25 Strawberry Recipes

I love strawberry season, plump, fresh, juicy strawberries. Nothing is better than hand picking them. As long as my children have been able to walk we’ve been going to our Favorite U-pick and gathering only the best strawberries.

We’ve been picking 4 times already this season and hope to go again next weekend. In the meantime, I wanted to share some of my favorite strawberry recipe finds from around blogland.

Post script: Joan passed away in her sleep on October 22, 2015. She went to bed feeling nauseous (whichis one of thesigns of heart attacks in women) and never woke up. Please learn the signs of heart attack in women (they are different thanfor men) and if you have high blood pressure or family history of heart disease, don’t brush off nausea as just the flu. Joan made it very clear that she wanted her work to continue in the event of her death so her family is working to keep Joan’s dream alive. In the days following her death, Joan’s fellow bloggers started a twitter campaign #ChocolateForJoan and #chocolateeverydamnday. We hope you’ll join us in honoring Joan’s memory by having chocolate every day.

About Grace

When I was younger, I was constantly in the kitchen helping my mom bake. It was fun getting to play with the flour and always getting to lick the spoon. I’ve always expressed an interest in baking and now I feel that it’s the right time for me to take over. I am a college student working towards a nursing degree as well as a full-time aunt to the sweetest little kids (they might pop up in some of the posts). I’ve learned most of what I know about baking and cooking from my mom, and I am continuing to self-teach through trial and error, which means plenty of sweets to be eaten. Read more...

Chocolate chips work perfectly fine; chopped chocolate bars or melting wafers work even better. And it doesn't matter which type of chocolate you prefer—dark, milk, or white—they all make delicious chocolate-covered strawberries!

How to melt chocolate for strawberries? ›

Place the chocolate in a glass bowl and microwave in 30-second intervals, stirring in between, until the chocolate is melted and smooth. You'll want to heat it in intervals until it's not quite fully melted, and stir it to melt it the rest of the way to help temper your chocolate to the perfect temperature.

Why are my chocolate-covered strawberries not hardening? ›

If chocolate won't stick to the strawberries, it's because they are wet. You have to allow them a good long time to dry completely before you can dip them in melted chocolate. Melted chocolate and water do not cooperate, so make sure your berries are totally dry and room temperature.

How do you make chocolate-covered strawberries not soggy? ›

If you're planning on saving your chocolate covered strawberries for more than one day, yep, they'll need to be refrigerated. Unfortunately, this means that they will sweat a little bit. To minimize sweating, place a couple sheets of paper towels into the bottom of an airtight container.

Should strawberries be cold before dipping in chocolate? ›

It is very hard because strawberries are made of 90% water. Do not dip when they are very cold, try to use room temperature strawberries. For an even better result, do not put them in the refrigerator but in a cold place.

How to keep chocolate-covered strawberries from sweating? ›

To prevent this, place a few sheets of kitchen paper at the bottom of an airtight container, then store your strawberries on top. You can also wrap the container with plastic wrap or aluminum foil to improve airflow and minimize sweating.

Should strawberries be dry before dipping in chocolate? ›

Dry, Dry, Dry!

After you have rinsed the berries, it is critical that you dry them! Pat them off with a paper towel and make sure the water is removed off of them. Leaving the strawberries damp will make the chocolate rocky or not stick.

Can I use Saran Wrap for chocolate covered strawberries? ›

Cover your chocolate covered strawberries with aluminum foil or plastic wrap and store them at room temperature for up to 24 hours. If you don't plan to enjoy them within 24 hours, it is best to refrigerate or freeze them.

Do you refrigerate chocolate covered strawberries after dipping? ›

You can leave chocolate covered strawberries out overnight if you'll be eating them within 24 hours. Otherwise, you can store them in the refrigerator and eat them within two to three days. However, they're best enjoyed at room temperature within 24 hours.

How to make chocolate covered strawberries without a flat side? ›

The trick to making your strawberries look extra fancy is to dry them upside down on toothpicks stuck in floral foam rather than just laying them on parchment paper. This way, you get a smooth coating of chocolate all the way around instead of having one flat side.

How far ahead can I make chocolate covered strawberries? ›

Chocolate covered strawberries are best enjoyed fresh, but you can prepare them a day in advance. Once the chocolate has hardened, store them in an airtight container in the refrigerator. Remove them about 30 minutes before serving to let them come to room temperature, enhancing their flavor and texture.

What enhances the Flavour of strawberries? ›

Add a little sugar and salt! Wash your strawberries, cut them, and hit them with a pinch of salt and a couple good three-finger pinches of granulated sugar, give them a little tossy-toss, and watch them magically start to darken and get extra juicy.

What kind of chocolate is best for dipping? ›

The ideal chocolate for melting and dipping is called "couverture" chocolate. (Find it here and here.) Couverture chocolate has a higher ratio of cocoa butter to cocoa, which helps it melt more smoothly. If you can't find couverture, use the best quality chocolate that you can find.

What kind of chocolate is used for melting and dipping? ›

Top-quality semisweet and bittersweet chocolates are good choices. The best choice is couverture, which is favored by candy-making pros. Chocolate comes in solid bars or different size chips and discs. If you're using chocolate bars, chop them into uniform pieces so they'll melt evenly.

Which chocolate is the best for melting? ›

What chocolate is best for melting into molds? ›

The short answer is quality or couverture chocolate. The better your product is, the easier it will be to melt and temper to create unforgettably delicious confections. It's possible to use chocolate bars or chips, but they may not melt as well as chocolate made for baking like baking discs.
