The 4th of July is next week! I was planning to post this recipe and round-up this weekend, but I know many of you are planning your festivities and recipes now… so I’m sharing my favorite Independence Day recipes now! I’m not exactly sure what we will be doing this year. 2 and 4-year-olds go to bed pretty early so it’s unlikely we will actually see any fireworks – perhaps an early BBQ is in order. What are your plans?
My Red, White and Blueberry Frozen Yogurt Pie with Granola Crust

Patriotic Salad with Quinoa and Berries
This salad is not only beautiful – it’s fresh and delicious too. I love sweet summer berries in salads and quinoa adds protein and a hearty nutty bite. It’s nice to have a big healthy salad to fill up on when there’s bound to be desserts later.
serves 8
5 ounces salad greens (I used arugula)
3 cups cooked, cooled quinoa
1.5 cups blueberries
1.5 cups raspberries
Sliced watermelon cut into stars with a cookie cutter (optional)
favorite salad dressing, served on the side

On the bottom of a medium trifle dish or clear salad bowl, arrange one third of the greens. Top with half the quinoa, all but 1/4 cup blueberries, the remaining quinoa, another third greens, all but 1/4 cup raspberries, and top with the remaining greens. Arrange the remaining 1/2 cup berries over the top. If using watermelon stars, tuck into the sides and arrange on top of the salad. Make this salad up to 5 hours in advance, cover with plastic wrap, and refrigerate. Serve dressing on the side.

Oh my goodness…this post really got me in the mood to plan our menu! I love the watermelon stars in the salad! And I just posted a tri-colored potato salad tonight…didn't even realize it was patriotic! haha.

I haven't visited in ages! Your recipe looks so healthy and refreshing. You must be the best Mom, giving your kids the healthiest, freshest foods. I want to be YOU! 🙂 –Even though my “kid” is 21! LOL! Enjoy the 4th — even if you can't watch the late fireworks, get some sparklers to light and your kids will LOVE looking at them. 🙂
