And how about this–no more soggy casseroles! Because biscuits don’t completely soak up egg mixture like other breads, no more worrying about that awkward sponge-like bite.

Keep a can on hand, roll out of bed and then decide to make this. Perfect for last minute.

Follow these easy steps:

  1. Preheat oven to 350 degrees lightly spray baking dish with non-stick spray
  2. Open can of biscuits and cut up each biscuit into 1/8 pieces; line pieces equally in dish
  3. Scramble eggs and milk together. Stir in vanilla and half of cinnamon
  4. Pour egg mixture on top of biscuits
  5. Sprinkle on remaining cinnamon and bake for 30-35 minutes

I just told you biscuits don’t soak up the egg mixture like bread; therefore, you can get away with less egg and liquid. This means less fat, cholesterol and calories.

For example, this casserole only uses 8 eggs (and I’ve even gotten away with 6). Many others use up to a dozen or more (I’ve seen recipes with 18…!).

Other benefits include skipping the heavy cream (non-fat milk is all you need) and saving the sugar for your coffee.
