My Favorite White Chocolate Chip Cookies

I’m sorry about these cookies in advance. And I should also apologize about the name. I sorta kinda hate when someone tells me something is the BEST. Well, because then I need to prove you wrong. So let me say, these are the best white chocolate chip cookies that I ever ate. Is that better?

You see, usually white chocolate chip cookies come with other stuff mixed in, like coconut, or macadamia nuts. And while I love coconut, there’s a time and place people. Time and place. Plus, simple is pretty much better. Never once have I ever heard, “Can you please make this recipe a little more complicated?” Simple wins.

Why Are These The Best White Chocolate Chip Cookies?

  • First they are LOADED with white chocolate chunks. (And also, makers of white chocolate…can you people please make mini white chocolate chips? While I wouldn’t use them in this recipe, I would work those guys out in other ways.)
  • Second, they are buttery and soft and an eensy bit crispy around the edges.
  • They’re super easy to make!
  • And yes, in the end you can absolutely use semi-sweet chocolate in this recipe if white chocolate just isn’t your thing!

Ingredients You Will Need:

  • Butter at room temperature
  • Light brown sugar
  • Granulated sugar
  • Eggs
  • Vanilla extract
  • Kosher salt
  • Baking soda
  • Baking powder
  • All purpose flour
  • Coarsely chopped white chocolate or you can use white chips as well!

I like the huge chunks in these cookies.

I’m not a huge chocolate chunk girl, but white is a whole different story.

The batter is pretty easy.

Once you get the chocolate chunks folded in, you can chill the dough OR you can bake them straight away. LOVE that option!

Form the dough into balls and place on a lined baking sheet about 2 inches apart. You can use a cookie scoop too, whichever you prefer!

I have adapted this recipe slightly over the years, based on reader feedback! I’ve made chilling the dough an optional step (although I still like to). And I tweaked a few ingredients based on mixed results. I love this recipe and with some of your comments I think these cookies can’t be beat!

  3. Choose the right flour.
  4. Check your flour is in date.
  5. Choose the right kind of chocolate.
  6. Cream the butter and sugar.
  7. Beat in the eggs.
  8. Fold in the flour.

What is the trick to making soft and chewy cookies? ›

Double Your Yolks Most cookie recipes call for at least one egg. You can try omitting the white of each egg, which tends to dry out when baked, and replacing it with an additional yolk. Plus, egg yolks have more fat than egg whites, which helps to keep your cookies moist and chewy.

What makes bakery cookies so soft? ›

The ingredients that make cookies soft do double duty: they add and maintain moisture and they add flavor that develops while the cookies bake. Butter is more than 15% water, so it plays a role in making cookies soft by adding water and fat, which contributes flavor and tenderness.

Why are my chocolate chip cookies crunchy and not chewy? ›

The ingredients you use and how you shape your cookies both play an important role in whether your cookies turn out crispy or chewy. The type of flour and sugar you use, if your cookie dough contains eggs, and whether you use melted or softened butter all factor into the crispy-chewy equation, too.

What not to do when making cookies? ›

Common Cookie Baking Mistakes:
  1. Cookies not baking evenly.
  2. Overcrowding the pan.
  3. Not chilling the dough.
  4. Using wrong flour.
  5. Too much butter softening.
  6. Using stale baking powder or baking soda.
  7. Overworked the dough.
  8. Measuring ingredients incorrectly.

What makes cookies taste the best? ›

When you think cookies, you likely think of sweet ingredients, but salt is essential. It balances the flavor of caramelized sugars. We even love sprinkling a little extra flake salt on our cookies to awaken the tongue and complement the sweetness.

What does adding cornstarch to cookies do? ›

“You can count on [it for] a softer and more tender crumb.” “A bonus benefit is it prevents the cookie from spreading too much while baking,” he adds, noting that a more compact, thick cookie typically yields a chewier outcome. But incorporating cornstarch isn't the only tip to make a cookie more palatable.

What ingredient helps cookies stay soft? ›

For soft cookies, use: Brown sugar, as it has a high moisture content and retains moisture better than white sugar. Also, when combined with eggs, brown sugar can prevent spreading (taller cookies tend to be softer and fluffier). Shortening instead of butter or in addition to butter.

What does more egg do to cookies? ›

Yolks also act as an emulsifier, making a creamy dough even before it's baked. Egg whites, on the other hand, can have a drying effect. A cookie made with extra egg yolk (or, in this case, only egg yolk), will be lighter and chewier than a cookie made with whole eggs.

How do you make cookies softer instead of crunchy? ›

Just wrap a cookie or two in a damp paper towel and then put them in the microwave for about 10 to 15 seconds. The moisture from the paper towel should soften the cookies right up. So if you wonder how to soften hard cookies quickly? Microwave is the way!

Why do my chocolate chip cookies come out flat and hard? ›

Oven temperatures are a crucial factor in baking. If your cookies consistently come out flat, you may have selected the wrong baking temperature. If you bake cookies using too much heat, the fats in the dough begin to melt before the other ingredients can cook together and form your cookie's rise.

What makes cookies chewy and not hard? ›

The science is simple: According to the flour authorities over at Bob's Red Mill, cornstarch can help “soften the rigid proteins of the flour, resulting in a light and chewy dessert.” “The cornstarch complements the flour in absorbing the liquids, but won't develop gluten structure like the flour will,” stresses ...

What is the secret to keeping cookies soft? ›

“To keep cookies soft, store them in an airtight container and not in a cookie jar,” Amanda recommends. “While cookie jars are cute, they usually don't have airtight lids.
